Must Have | Higashimaru Chicken Seasoning


I love this stuff!

Rather than figure out how to read Japanese, it's probably easier to just memorize the look of the box. If you live in a city, you can probably pick it up at your local Japanese grocers. In LA and Chicago, Mitsuwa has it. In Indy, One World Market has it. Here it is on Super-mom.jp, if you're in NYC, but Sunrise Mart may have it.



The catch is - I don't follow the instructions at all. The ingredients call for a cut of the wing you can't really find in American grocery stores, which is the whole wing minus the drumette including the little nubbin. So, I have to modify everything to fit the grocery store pack of full wings. And you can really use any chicken parts that come with skin, so don't be shy. A box of the seasoning comes with 3 packets of seasoning.


I use one pack of seven full fresh (defrosted) chicken wings with one and a half packets of seasoning. I shake up the chicken and the seasoning in a plastic bag to coat the chicken evenly, paying attention to not leave any clumps of seasoning on the chicken. I do not fry the chicken in a furai-pan. Rather, I broil the chicken in the oven's broiler for about 15 minutes on each side. It comes out delicious, with a lesser chance of high blood pressure and heart disease.


Note: You just can follow the instructions on the box if you can get those wing and thigh cuts (and read Japanese).
