I was in Panera the other day and a woman told the cashier that she didn't like soup. The cashier made a funny face and asked who doesn't like soup! Personally, I wouldn't affiliate myself with someone who doesn't like soup. Blasphemy! The Old Man was sick last week so I decided to make a soup that had some flavor, but was quick and easy to make.
Ingredients
- 3 large leeks
- 1/4 cup butter
- 2 tbsp oil
- 3 oz crumbled blue cheese
- 2 tbsp plain flour
- 1 tbsp mustard powder
- 6 cups vegetable stock
- Black pepper, to taste
- Blue cheese crumbles, to garnish
Directions
- Slice the leeks thinly.
- Heat butter and oil in large sauce pan, gently cook leeks in it covered for 10 minutes.
- Add crumbled cheese to the pan, stirring on low heat until melted.
- Add flour and cook for 2 minutes, stirring constantly with a wooden spoon.
- Add ground black pepper and mustard powder to taste.
- Gradually add stock, stir constant and blending well.
- Bring soup to boil and then reduce heat and check seasoning.
- Garnish with a few cheese crumbles if you prefer a stronger blue cheese flavor.
