Recipe | Irish Blue Cheese Soup


I was in Panera the other day and a woman told the cashier that she didn't like soup. The cashier made a funny face and asked who doesn't like soup! Personally, I wouldn't affiliate myself with someone who doesn't like soup. Blasphemy! The Old Man was sick last week so I decided to make a soup that had some flavor, but was quick and easy to make.


Ingredients
  • 3 large leeks
  • 1/4 cup butter
  • 2 tbsp oil
  • 3 oz crumbled blue cheese
  • 2 tbsp plain flour
  • 1 tbsp mustard powder
  • 6 cups vegetable stock
  • Black pepper, to taste
  • Blue cheese crumbles, to garnish

Directions
  1. Slice the leeks thinly.
  2. Heat butter and oil in large sauce pan, gently cook leeks in it covered for 10 minutes.
  3. Add crumbled cheese to the pan, stirring on low heat until melted.
  4. Add flour and cook for 2 minutes, stirring constantly with a wooden spoon.
  5. Add ground black pepper and mustard powder to taste.
  6. Gradually add stock, stir constant and blending well.
  7. Bring soup to boil and then reduce heat and check seasoning.
  8. Garnish with a few cheese crumbles if you prefer a stronger blue cheese flavor.
